Hi and welcome to what I hope to be a very simple and informative piece to help you to not only jailbreak your iphone but to unlock it to other networks and enable tethering too. There is so much waffle out there telling you to download so much stuff to unlock your iphone, I think my way is the easiest and stress free way to do it. Now DONT COME BACK ON ME if it doesn't work for you, it worked fine for me and lots of others. I will also try to explain some of the cool stuff you can do with a jailbroken iphone too once you have it unlocked.
My tutorial is based around the mac version but the windows version is almost identical but I won't be using the windows terminology.
The version of the iPhone im using is the iPhone 3gs 32gb this also works with the older 3g and 2g iphones. The software version on the iPhone is 3.1.2. As of the 3rd of December 09 this is the latest update. You can find your version by opening itunes and with your iPhone attached click on the iPhone icon in the left hand column and in the iPhone section you should see software version 3. . .
Right lets get started !!
Plug your iPhone out of the mac if you have it plugged in
Go to http://www.blackra1n.com
Click the version you would like to use, Apple or windows
Once you have clicked it blackrain should download to a folder you have chosen
Locate the blackrain app in the folder you downloaded it to and open it up. A box with "make it rain" should appear on your mac screen
click "make it rain" "waiting on device" should appear on the mac screen
plug your iPhone into the mac
The black rain box should now say "done waiting for reboot"and on your iPhone there should be a black rain logo at the startup. The iPhone takes about 20 seconds to reboot, you should see the simlocked box on your iPhone and a box in itunes telling you" itunes has detected an iphone in recovery mode, you must restore this iphone before it can be used with itunes." Click ok and open your iphone out of the sim lock. The only difference in your iPhone at the moment is the extra app "Blackrain"
Open the blackrain app on our iphone & Click the cydia button. This will install the cydia app. Cydia is like the app store but with lots of cool stuff apple wont allow onto there app store.
Once cydia has installed your iphone should restart and you should have a cydia app.
congratulations your Iphone is now jailbroken.

Now if you want to use your phone on another network, well apple don't like you doing that either. So here is how you do it. Again I hold no responsibility if it all goes wrong.
After you have completed the above steps open the blackrain app.
There are 3 apps that can be downloaded Cydia ( Which you should have had installed already) Rock and snow. Click the Snow app.
The snow app will install and restart the iPhone.
Congratulations your phone is now unlocked to other networks, As easy as that.
if you are in a country like mine that has disabled the tethering function on your iPhone I feel for you. The next step if you choose to take it is the re-enable the tether function on the iPhone.
After you have completed both of the above instructions the next thing you have to do is to update the information that installed on your phone, this is the APN, don't worry you don't need to know what it does or anything tekkie.
On your Iphone go to this address www.help.benm.at
Scroll down to Tethering and Internet settings
Click the Mobileconfigs
Click your country
Here you will see various APN's Click the one relevant to your network, eg O2 prepaid
This will install the right APN and enable tethering on your Iphone.
Restart the iPhone
Goto settings-General-Network and by magic the Internet tethering function is there, just slide it across to enable it.
